Soo I got a WSM for Christmas from my wife.
I have little experience in smoking meat but after reading the forums I have done a turkey, and two Boston Butts which turned out pretty tasty. I fired up the smoker last Saturday to take a stab at an 8 pound brisket and thought I would see if my buddies wanted to chuck anything on.....
We ended up with an 8 pound brisket, 2 8 pound butts and couple hens ( hens finished fast tasted ok but couldn't take all the smoke)
Put the brisket on top sorry no photo. I used hickory and cherry chucks as my woods (Yes I soaked). I thought this was a cool photo of the water after the soaking.
The smoke went well kept the temps between 225 and 250 outside. The WSM is idiot proof I think
It ended up being about a 12-14 hour smoke between the butts and the brisket.
