Not much I could do for my dear wife for mother's day (we take the quarantine pretty seriously) except cook her a nice meal. She loves ribs so here we go.
Ribs seasoned and ready to go into the smoker
Beautiful thin blue smoke out the stack. My Fireboard thermometer carefully plotting my cook temp.
I love my cooker, through on again off again rain, windy and chilly day, the temp stayed within plus or minus 3 degrees the whole time.
At the same time, readying some dark "Steak House" bread for a second rise; mini loaves and some dinner rolls
Usually a 3-2-1 guy on the ribs, but since I was short on time and it was pouring down rain, I decided to try something different. Cooking a little hotter (270) and the first part was about 1.5 hours. Here they are getting some butter, honey, brown sugar, and rub for the wrap phase. I cooked wrapped for about 1.25 hours, then about 45 minutes unwrapped to firm up the bark.
Finished ribs. Not as much pull back as with my typical method, but they were perfectly cooked, very moist, and just the slightest tug to get the meat off the bone. Yum.
Mini loaves and dinner rolls fresh out of the oven.
Nice smoke ring and flavor on the ribs. Garlic Parmesan mashed taters, Steak House dinner rolls. Dinner was a hit!!
