Picked up some specialty cheeses at Aldi this morning.
I figured I should keep stocking up before the warm weather comes. Before smoking.
After 2 1/2 hours in the MES 30 using the AMNPS with PMC pellets.
All sealed up in Lisa B's premium bags.
Trying to get stocked up to make it through the summer. The drawer on the right is ready to eat (at least 4 weeks sealed). The drawer on the left is still mellowing.
I am so glad I found this site and learned about Todd's amazing products. I am soooooo hooked on smoked cheese!
 
Looks great. I have a mes and use Todds dust to do cheese. I smoked for 3 hours. ( about 2 pounds ).

I want to do 5 pounds will I need to smoke longer?
 
Looks awesome Toby. Great job and nice selection of cheeses. It is addictive isn't it? Have you tried peach pellets yet? Soooo good.
 
I too, use one of Todd's amazing pellet smokers. I have smoked cheese and after restingi must say the cheese is as good if not better than store bought. I too, must get some more done before the hot Gulf Coast summer hits. Although Todd told me the use of frozen two liter coke bottles will keep temps down enough to make smoking during summer possible. We shall see I guess.

I am no expert, hopefully others will weigh in.  Provided you are smoking 5 lbs of 8 oz blocks of cheese, I would think that the smoke time would be the same as 2 lbs of 8 oz blocks.  If you are smoking a 5 lb wheel of cheese that may be a different story.

Very addictive.  Peach sounds good, will have to order some from Todd.  I have used apple before, but I really love the PMC pellets.

That sounds like a good trick.  Even in the summer we get some cooler nights here in Central Ohio, I will have to give the 2 liter bottles a try. Don't think I can survive 3 months without putting some cheese in the smoker.

You can also put the cheese in the freezer for a little while to bring temp down before placing in smoker. Just not too long as you don't want it freezing.
