Joined up because I am a true convert to preserved meats. Can't say that I smoke anything, but I'm sure I'll get there eventually. Bit hard to set up a decent smoker or curing chamber when you live in an apartment. There's just something about the whole thing that draws me in, I could sit around and talk about cured meats all day. Hope to become an active member if you all talk about other types of curing than smoking!

You might want to check out Jeff's Free 5 day E-course it will teach you all the basics and a whole lot more!

Lot's of talk about curing on here!

If you have a patio with your apartment the Masterbuilt Electric Smoker (MES) is a great smoker and will work for smoking cured meats!

Basement apartment unfortunately, so my window is about 2 feet above the ground facing the parking lot. I could get a smoker and just haul it outside every time I wanted to use it but, eh, I'm lazy.

Right now I'm trying to figure out the best way to make a curing chamber, as well as shopping around for a mixer, a grinder, a slicer, some stainless prep tables, etc... it never ends. :)
