Misc. Meat Smoking on the RF

Various meats smoked this weekend for the family.  My daughter was
visiting with a Chinese PhD student friend of hers for Thanksgiving.  One
of the benefits she feels entitled to when visiting is vacuum packed smoked
products off the reverse flow and grills.


She knows her dad cooks way to much food for Mom and his self so she takes
the excess and hauls it back to her apartment in the Denver area.


Don't know how the rest of you do it, but when I am firing up the smoker for
a run, I always swing into the super market and have a look at managers
clearance bins.  Today I am firing up for a contest... so since the beast
is running I might as well fill her up.  Found  Norwegian salmon whole
3 pound sides for $4.00 per pound.  They will make nice Christmas gifts,
found a whole chicken at 5 pounds for 49 cents per pound, found chicken thighs
for 29 cents per pound.  Found a left over ham for 52 cents per pound. 
That should fill up the reverse flow for the run.  And the daughter is
positive she has room for all this stuff.


Also made up two pots of turkey soup one rice and one egg noodle, but forgot
to take the photos of them.


Chicken thighs are candied in a sweet Thai Chile sauce with some extras added
to it.

The whole chicken is done in Hawaiian Huli Huli sauce and pineapple with a
chili garlic background.

Ham was done with clove and pineapple with a cayenne pepper background.

The chicken thighs do especially well in the RF as there is a double plate on
the end before the roll back to give extra heat for crisping the candied meat.

There are other things cooking too... but some I cannot photo all of them for
some reason.


Hoping everyone of you relaxes a little this holiday weekend and has a great
time with family and friends.

Great looking food, let me repeat that, great looking food, sir!

We love Huli Huli chicken, but I just do pieces never tried a whole bird, and I'm addicted to sweet Thai chili sauce, IMO Thai chili sauce and chicken were made for one another, could you tell me what the "extras" are or are they secrets?

Great looking spread! I love sweet chili sauce, great stuff. i'm with you on the bargain bin, that's how I keep my freezer full. Stock on the left, pull from the right.
