When I start my lump I get the white billowy type smoke. My question is when using the minion method, does it smoke like that and if so does that get into the food?

When I use this method, I get the white billows for about 10-15 minutes, than it settles down and I get TBS while it cooks and smokes.  I have noticed a bit of bellows if I add more wood for the smoking for a short time, but again it settles down to TBS.  And no bad taste that I have noticed.  I put my meat in after it gets up to temp 225-250.  by than the billows have stopped.  Hope this helps.  Steve

I've only down a few smokes but tonite I am doing a brisket.  I used the minion method and love it on my WSM.  Load it up, throw in some wood randomly within charcoal, let it stabilize and throw on the meat...enjoy!
