My name is carl. I have been smoking for around a year now and this summer I built a smoker out of a 275 gal fuel drum. It has a lot of space and seems to cook very well. I use charcoal and I honestly need very little to keep it at temp. I have been smoking ribs, chicken, pork butts, pork tenderloin, jerky, and sausage. HAVE NOT BRAVED THE BRISKET YET.

Nice to have you with us.  I'll be right up front about the brisket - the very thought of cooking one terrified me, but I finally did it a few months back and it's not as intimidating as I thought. Of course I had lots of encouragement from the members here - so like I was told GO FOR IT!
