Maybe someone can answer a question about temps on my new Mes 30.

I was reading (a bunch) about temps and time.

I put 2 racks of St Louis Style Ribs on after preheating, water pan in place and my probe on the second rack from the top for the temp inside.

Here is what i was seeing: The MES set at 225 (Showing on the read out) my probe only showed 190 and stayed there the full 3 hour. Is that the norm or should I have increased the temp so the probe temp was showing the 225 , As it was the ribs came out great using the 3 2 1 but I did kick the MES temp up a bit to get the probe temp to show 220 after the 3 hour mark

High there and welcome!

The MES is notorious for having inaccurate probes.  All of us MES owners have extra probes like the ThermoPro TP20 or the Mavericks.

My ThermoPro TP20 is very accurate, I would suggest you get one and use one probe to be the back up smoker probe and the other probe to be an accurate meat probe.

I was thinking it may have been the case and yes I am using the Maverick so I will just set Temps with it and ignore the useless one
