MES30, AMNPS, Maverick ET-732, and some baby backs

Folks, 

First smoke going right now! Three slabs of baby backs with Jeff's Rib Rub.  

Last night I did a 2 hour burn off and got a lot of terrible smelling smoke getting the factory oils burnt off.  Post 2-hr burn-off, I put in my AMNPS filled with chips, smoker at 225* (Maverick read 237*), entire interior sprayed with Pam, and burned all night long. Set the loader out 2", chip tray out 1.5" and follow directions for lighting the AMNPS and it burnt fabulously.

Got some questions: 

1) I used peoples advice and set my smoker at 270* to preheat.  I put 3 slabs of baby backs in there and it is taking a god awful long time to reach my desired 225.  My Maverick is reading only 206 right now, while the smoker is set to 270* and is reading 268*.  I guess I didnt set my baby backs out on the counter long enough- lesson learned.  My question- for the 2-2-1 method, should I start my timer for "2-x-x" when I put them in, or start the 2hr smoke timer when the smoker actually gets to 225* (based on the read-out from my Maverick)?  

2) Where do you place your Maverick smoker probe?  I realize some MES smoker thermometers can be off by as far as 15* from the Maverick reading (a more true predictor of the temp).  I also know the top right corner near the vent is a hot spot.  Where is best to place it for an accurate temp (using the little metal clip they provided)

3) This morning I followed the directions on the AMNPS again, however it went out after in the first 30 minutes. Is there a reason I did great last night and it went out today?  Possibly because I have a lot of mass of meat in there affecting the temp/moisture conditions? Less wind drafting today? Just didnt get as good as a light on the AMNPS as I thought? I re-lit and it appears to be going well.
