Yes, I have a MES 30 gen 1 & it's about 20* off! When I use it, I use my Mav 732 & go by the temp it shows. Most MES are notorious for this issue!
 
There can also be wide swings with masterbuilt smokers. Mine is about 10° either way. If I have it set at 225° it runs back and forth between 215° to 235°

Once the temperature of the meat comes up closer to the temperature in the cabinet it has an easier time regulating itself.
 
Yes, cabinet temps do vary by at least 10 to 15 degrees either side of the set point. That is normal. the smoker will cycle and when it hits the lower set point it will start up while this is happening it drops then when it hits The upper set point it cuts off and coasts back down but while it is doing this it cools off. this is normal and most meats don't care, it's the average temp you want. Pitmasters that don't like the swings will spend in some cases more on a pid controller
than they paid for their smoker. What they have in the end is a smoker that regulates its heat better than the kitchen oven. In most cases it is not needed but it bothered me so much I did it. Jted
