I have to be the only person in the world that has an MES with a dead on accurate controller. I only use the MES for sausage. So it gets used about once every month or so, the rest of the time it sits outside in the weather. And in Florida that means, high temps, torrential rain storms, & high humidity. I do have a cover for it, but it's an old Gen 1, that I have had for many years. I usually don't even bother with monitoring the inside temp, and just go by the setting on the controller. But every once in a while I will check it, just to make sure it's still working properly. Here is a photo of it in action. I'm smoking some olive loaf bologna. The controller is set at 175, and the only time it varies by more than a degree or two, is when I change the temp up 10 degrees every hour until I get to 175. It will overshoot the target temp by about 10 degrees, but in a couple of minutes it comes right back to the set point. If this guy ever breaks down, I doubt I will ever get one that is as good as this one has been.
The sausage has been hanging in the MES about 7 hours, and I'm using the Amazen tube with apple pellets.
And here is a shot of the controller with a Thermoworks Smoke therm. The smoker is set at 175.
