MES 40 Ribs

I am planning on smoking 5 racks of ribs in my MES 40. What is the best way to do this without leaving a mess. I will be doing the 321 method. Do I lay them on the rack without foil?
 
I would lay on racks, but maybe foil a rack underneath everything with a few slits in it (or aluminum pan ). Should catch most drippings.
 
A clean smoker is an unhappy smoker :) , You can use pans but honestly doing that many racks in the MES may require better air circulations than all those pans allow. I’d just cook on racks and wrap when needed. Spray the racks to make them clean easier.

I was just referring to 1 pan or 1 smoker rack of foil underneath all of the ribs. Sorry about confusion. I have done that before with 4 racks of ribs above pan that was on bottom shelf ( I have 6 in mine)
