That cuban sandwich casserole is amazing!
I did leave them in the pan, I had just cleaned the smoker from cooking 8 butts and it was a mess lol. Didn't want to clean more. Glad you like the casserole, I think it's one of my best creations.

Butts or Shanks Butts are a better cut:
Less fat and bone.
To lower the Salt : Soaking it in water and repeat with fresh water, before cooking.
DO NOT Baste it, can add liquid, just don’t use the pan juices! I lost a Ham: it was TOO Salty, had to throw out some!
