I am new to curing and used the umami bags and didn't really like how it turned out. Does anyone have any other ideas, want to sell a curing fridge they don't use etc....I am open to all ideas.

I don’t use umami bags either, in my opinion if you can’t do it the way it is ment
to be done don’t do it at all.

As far as a curing chamber goes, and all due respect to Dave, if you are using a small beverage cooler around 3.1 cu. ft. (like the link below) there is no need
for humidity control, a heater, or temp control. Most of that has come from the
rhetoric that the people who sell these things have produced over the years.
Again in my opinion, a fridge, a small heating pad (see link below) and sometime to get the feel for things and you can produce extremely good salami and dried
meats.

If you are using a full sized fridge, yes things would be different but for one this small the meat will control its own humidity, the temp can be controlled by
Turning on/off the heating pad. Just know what the target of temp/humidity is
and work with it.

For the initial high temps 80 to 90 deg the heating pad (fridge off)will provide that, after that cycle turn off the pad, turn on the fridge on its lower settings
to achieve the 50 to 60 deg temps.

Pretty simple really, again it’s just a matter of getting used to it.

P.S. I am not saying these products are the best or the cheapest, just examples
of what I use. Shop around and see what you can find.
