I know the title sounds weird:D
I had a wild idea. I don’t cook chicken much but I was kinda hungry for it today. Here’s goes my brain storm.
Ingredients
Chicken Breast
Limes
Margarita ( Jose Cuervo )
One jalapeño per breast
Cream Cheese
Blackened Seasoning
Cilantro
I butterflied each breast and put them in a ziplock bag with two limes cut in slices, blackened seasoning, some chopped up cilantro, and and good shot of Jose Cuervo.
They marinated for several hours. After marinating for several hours the grill was set at 375 degrees. A seeded jalapeño was full with cream cheese and placed in the butterflied breast then the breast was wrapped with bacon.
They were cooked 45 minuets and they were really good. I could taste the lime but I needed more blackened seasoning on them.
This was a different twist to just plain old chicken cooked on the grill.
A thunderstorm came in so they were finished in the oven the last 10 minuets
