I just cut some limbs out of a maple tree in my front yard. I would like to use the wood chunks in my WSM for smoking. How long should I let the wood cure before I use it for smoking?

Depending on the size of the limbs, I would let them sit until the end of summer. On my maple trimmings I cut them up into chunk size pieces and put them in an old plastic milk crate. They sit outside on nice sunny days and in the garage on days it's going to rain. Give them a flip or two during the process.

How is maple vs other woods? I like strong smoked stuff and got piles of cherry and its my favorite. Currently burning maple to heat the house and figure it would be milder. Maybe like apple for smoking white meats like pork, chicken or fish?
