Maiden smoke on my newest toy

I did my first smoke on my BDS about a month ago, but didn't post the results.
The BDS maintained great temp control & excellent burn time on one small load of Rancher briquettes. Did 2 dozen chicken wings and 2 slabs of baby backs on this first smoke. Total of a 4 1/2 hour smoke using 8lbs of briquettes which was too much. 5-6 pounds would have been enough for this short cook. I used one chuck of peach wood (the BDS sized chunks --

A temp of 225 was still going strong hours after I had pulled the ribs off the grill!!

Wings on the lower grill and ribs on the upper grill. BDS maintained 225-250, actually whatever I wanted the temp to be, throughout the duration. I only messed with the intake vent plugs to see how doing those things would affect the temp changes. I gotta learn the characteristics of this smoker.

The taste of both meats is fantastic!! The over the fire smoked taste is great. Yep, even after doing only one smoke, I know that I'm very satisfied with the purchase of my BDS. I think my Smokin' Pro is now my dedicated griller. I do love those cast iron grates!!

No sumosmoke, I bought my BDS. I was going to make my own UDS, but decided to buy one of the Big Drum Smoker models. I have no regrets about spending the cash for it and not making a UDS. The BDS's design is a proven winner as a smoker and griller that works extremely well. I still may make a UDS though. The wife will have to approve that plan. She feels I have enough smoking/grilling hardware at the present time. So maybe by next year she will soften up a bit about my adding a UDS to my bbq'n line-up.

This weekend I have a taste for beef. So Saturday, I'll do up some beef ribs and a couple of chuck roasts. I'll also throw on a couple of fatties and sausages.
Seal up whatever is left from this weekend with my Foodsaver and I'll have something to nibble on next week. Hope to have some Q-view to share with you all.
