I am looking for a sauce recipe that very closely mimics the BBQ sauce from Texas Roadhouse restaurant. I would describe it as a bold, smoky taste, with maybe a TINY bit of heat, and about a medium thickness. Its not sweet, vinegary or mustardy, and not really tangy, just 'bold". Unfortunately, they don't sell their sauce and I haven't found a good copycat to start from.
In an interview, their CEO said theirs is more of a St. Louis-style than a true Texas style, but I used to live in St. Louis and that is definitely not a St. Louis-style. (I wonder if she really meant a KC style?) Usually I make a 'sweet and smoky' sauce that is supposedly KC-style, and also a thinner Memphis-style with a little 'back-of-the-tongue kick' after a minute or so. My friends and family love them, many of them saying mine are their favorite sauces ever. I like to mix the two together. But still, it doesn't have as much of that boldness that the Texas Roadhouse sauce does.
Is anyone here familiar with their BBQ sauce and can point me in the right direction? Even if it is a commercially-bottle brand, it would maybe get me started in the right direction.
