Lonzanos...aka pork tenderloins stuffed in 1.5 and 2.5 inch casings.... Pressed really good... no air pockets... chillin' in cold room after day one smoke treatment... 4 smokin' days to go... and yes... in background there is smoked pork ham (prosciutto) from last year.... almost carved to the bone...
