Hi, I'd like to start by first saying thanks... I've been smoking since 1990 (15yrs old) and always read something new here... and always find a fix if something didnt go just right... I hate talking about myself but I want to say i'm basically a CIY guy... I like making it all myself and feel if its made at home its better. Dont get me wrong i have my goto places as we all need a quick fix sometimes.  Most of my family cookouts are Argentine inspired (my wifes Argentine) I grill almost all week long during the summer and the Asado's include mostly Argentine cuts like Skirt and flap steak, Shortribs cut thick or thin, chickens and veggies.  Rarely do I get to put some dogs and burgers on, but the kids love them so we put them on.  I'm Italian born so my in house cooking is tastey and I can probably put a nice menu together for a restaurant with just my Mom's Recipe's (rest her soul) her recipes are demanded by any pot luck bbq/party i go to. 

so to my Grilling/Smok'n.

Current Smoker: Brinkmann Pitmaster Deluxe (Old School) original.. i bought it for 50 bucks and rebuilt it from ground up. I removed the shelving as I use a table to hold my goods. My Mods are basic.. Heat shield deflector.. and smoke stack extended down to cooking level... I also use two spare grates in the firebox in a "V" to keep coals going.. thinking about making a coal basket but this works well.

What I usually smoke:Veggies, fish, pork in all forms, beef, whole and cut chickens

Additional addictions:

Beer: I Brew my own at home and keg/bottle it.. my favorites to brew are IPA's and Porters/Stouts.. Summer Ale's and Wheats during the warmer months.

Coffee: I Roast my own coffee at home its hard to get some fresh roasts where I am.. and love me a cup of joe.

Cigars: I'm a a few a week cigar smoker... (should cut back though).. and known for having a few bottles of scotch/bourbon on hand for those cool summer nights. 

I'm a computer guy... 15yrs in the business established in a great company. I work alot... but love what i do.

Thats pretty much the summary.  It goes on and on.. but for someone who dont care to talk about himself.. i said too much.

Oh yea.. wouldnt be right to not show you my latest smoke out.. this is a pic of my brinkmann at work... I added a second row of grates to get me some more room for meat... i have on there three baby backs under the pork butt... and on the left i just threw on a few wings... all came out great... not to mention I was grilling in addtition to all this smoke'n.

 Being Italian I would figure, but the Argentinean Cooking is amazing too; pure, simple and the Chiles,Mmmmm.

Sausage and peppers... hell yeah.. I do them all on my grill... :-)  Moms recipe... but over lump coal... amazing.  i actually also make my own sausage. I have made Argentine Chorizo and italian so far both are great.
