So I picked up a 10# butt trimmed it up while the UDS was stabilizing at 275*. I rubbed it up w/ yellow mustard then w/ John Henry's pecan rub and threw in a chunk of fresh cut granny smith apple wood and a chunk of seasoned pecan.

5 hours in and it just hit 160*
Sprayed it with Jarrito's Mexican pineapple soda with a little bit of Pablano chili powder and some more John Henry's pecan rub.
Gonna take it to about 205* unwrapped.

Almost an hour and a half later and it's at 175* now.
I'll spray it one more time when it hits 180* then finish it of unwrapped until 205*:emoji_thumbsup:
 
It hit 182* and I sprayed it for the last time, (forgot to take a pic.sorry)then I hit it with a light dusting of rub now all I have to do is wait until it hits 200 to 205* The smoker is still holding steady at 275*.
I'm about ready for bed can't wait until it's time to throw it in the Yeti to hold so I can get a few hours of sleep, I'm beat and beered out. I started it late because we are day sleepers dues to Red's work hours. I'll make sure to take a few pictures when it comes off the smoker and when it's pulled and plated. This is the hottest that I've ever smoked a butt so I'm:emoji_fingers_crossed:.
 
12hrs & 275* it hit the stall at 165*
Where it lost about 3* it lasted almost 2hrs. I ended up pulling it at 203* after testing for doneness by wiggling the bone, I had to use a spatula to get it off the grate and into a foil pan. Covered it extra tight with a double layer of heavy foil then wrapped it tightly with a beach towel and threw it into the yeti and buried it under tow more beach towels and put to sleep.
I will ask my lady Red will forgiveness for using her good towels. LOL!!! I was tired and didn't want to look for my moving blanket that is just for putting meat too bed in the cooler.
I'll post pics when we tear into it after I get a few hours of sleep.

I made the mistake of using the good towels one time and one time only. The foil leaked and all the juice from the PP went all over them. Yeah I still hear about it pretty much every day and this was years ago lol

Looks great so far. I also did that once. That one time gave the wife an excuse to buy a new set of towels.

Haha, I did wrap it in my old beach towel, hers are folded over the top just to fill the air space in the cooler.
 
It held from 203* and dropped down to 147* in the cooler for 6hrs. It's in the refer now waiting on tonights dinner. I snacked on a few pieces, it turned out really good.

Did you rest the butt for 6 hours? Do I have that right? The most I have done is 2.5 hrs.

It didn't get mushy?

I did, not because I wanted to, because we keep odd hours at our house. It actually didn't get mushy at all and the bark is awesome.

LOL........We haven't made any sandwiches yet, we are going to eat in a few minutes I'll post up the final plated pic's soon.
 
looks good, maybe mrs. red will forgive you about the towels and maybe NOT. time will tell.

I washed them before she woke up, so instead of getting that look, she thanked me for doing laundry. LOL!!!
I won't push my luck next time I'll use the $6.00 harbor freight moving blankets.

Dinner was excellent, P.P. sandwiches, corn salsa with red bell, Pablano pepper, jicama and cilantro and balsamic vinegar and lime. And a basic slaw and picked red onions.
Good stuff man!!!!
