Dinner was great - the smoking was a disaster!

Tried using a smoker box on my Genesis 3-burner again, probably for the last time. 2 handfuls of cherry chips on the only lit burner, and a mess of tri-tip cuts off to the right. I couldn't keep the grill under 260 and had to keep venting the hood to lower the temp and let the extremely heavy smoke dissipate. After about 20 minutes, the whole box caught fire and I had to take it out.

Once it was out, I was able to keep the grill at 230. Left it like that until internal temp of 120, then I cranked it for a reverse sear and put some corn on the left hand side. Half of the meat was marinated in Lawry's Teriyaki (my wife and son's favorite), the other half just salt and my own rub. Straight medium for them, medium rare for me. You could taste the smoke, very light, but it all came out well. But too much hassle and flame to smoke on the Genesis again.

Looks great, I tried to start smoking with a Genesis as well with the sear burner even. Then I bought a WSM the Genesis was mainly used to clean the smokers grates. It gets even better then I bought a kettle to use as a rotisserie and basically gave the Genesis away for $100 to get it out of the way, at least it went to a good home.

When I just want to add smoke while using the gas grill I use either the smoker tube or tray from A-MAZE-N with pellets. It works but make no mistake the results are not equal to actually using a smoker.

I still love the Genesis for grilling. It's just so fast, which makes it perfect for grilling up dinner after work.

I've thought about buying a tube, but I've got a PBC coming next month and figure I will do real smoking on that.

PBC better for sure. You might still want to pick up a tube. Using that with a turkey or chicken on the rotisserie is a great combo for the grill.
