Hi,

I'm an amateur cook with a huge interest in charcuterie. I live in beautiful Corvallis Oregon. I've been making my own bacon (using oven method to get to 150 deg) and guanciale for a couple of years, but have in the last few months developed an obsession with homemade linked sausages.  My next step is to purchase a smoker so that I can start smoking kielbasa etc. and also smoke my bacon. As I have zero experience with charcoal or wood fires, I'm opting for an electric smoker and am currently debating between the Smokin Tex 1400 and the Cookshack Smokette Elite SM025. I've lurked around smokingmeatforums for a while now, but am joining the forum so I can ask specific questions. Thanks for the great info you make available to us newbies!

Welcome! Once you cold smoke your first slab of bacon you won't want to go back! I'm just now diving into the sausage making and have learned a great deal here! On the line s of smokers get something that has the capability to cold and hot smoke. I wish my GOSM propane smoker had better low heat control. I'm making modifications so that I have better control, which appears to be important for smoking sausages.
 
Thanks for the words of welcome!  I've just gone ahead and purchased a Smokin Tex 1400, which seems to have lots of good reviews along with the capability for cold smoking. I'm plotting out my smoking projects....bacon of course, brisket, pastrami, and spare ribs are all in the plan between now and mid-Jan. I need to look into cold vs. hot smoking bacon. Thanks for the encouragement on the cold smoking!
 
Welcome to the forum Snorkling Girl. I also say cold smoking for bacon but you should really check out the AMNPS for that It makes life simple and smoking easy.Its also good to see another Pacific North Westerner join up.
