It would be fine, but if there is enough tail on the sealed side of the bag, I’d fold it over and bubble knot it. If water gets in the bag while in SV you get a very juicy sausage.The bags are BPA free.
Would they be safe to sous vide 1lb chubs of summer sausage?

Bubble knot Bill, or hog ring it really tight. I have no issues with natural casings but do have with synthetic casings. When I do 5” bologna I bubble knot both ends. Otherwise water always gets in. Doesn’t harm the sausage but just looks real bad.Thanks!

Thanks! I have 1000 game bags and don't want to buy other casings for sous vide if possible.If the pressure in the bag is greater than the pressure of the water , the water won't get in .
You have to stuff tight . I twist and use a zip tie with the tool to tighten them .
Personally I wouldn't use game bags . They make a high barrier waterproof .

I figured . Not saying it won't work . I like 140 for the water temp , and go by the size of the bag / casing . I think the lower the temp with the game bags , the better off you'll be .I have 1000 game bags and don't want to buy other casings for sous vide if possible.
