The Big Easy
I wanted a new smoker, so I figured I’d build one. So, here it is.

I am not the most handy person, or handy at all. However, this wasn’t that bad. It took longer than I’d like, but all the research and part gathering took a while. I am not 100 percent done, I will add some handles, put another coat of paint on it (probably a better paint job eventually too) and probably add a chimney of sorts. However, I couldn’t wait to season it and throw something on the grate.

I am going to add some of my findings to this or another thread for future non-handy people going the UDS route. Hopefully it will be of help.

As of now, thank you to everyone here at Smokingmeatforums, Sneakeey1 and John at Man Cave Meals for all the help.

I have been battling low temperatures as of right now. I let it get to 180*, capped a valve, then at 200* I closed a valve, came back and reopened the valve because it was taking so long, then when it got where I wanted I closed the second valve and shut one valve 1/3 or 2/3’s down. After a while I reopened two valves to get it to 240* and then I closed the second valve and closed the third 2/3’s of the way. I am not too worried because I am using store brand charcoal and I am still learning the smoker.

My basket is on 3” bolts, so I am hoping there is enough space for airflow. I was worried about leaks because I’ve discovered I am awful with a step drill bit, however I would think if there were leaks, the temperatures would be out of control.

I hope to do some pulled pork this week to learn the smoker a little better, add in the handles and use some better charcoal.

I am keeping a log right now and I will post it in the future here if anyone is interested in helping me maintain this thing a little better.

Lederman’s UDS Build: Drilled 1” holes for intake (2" from bottom) and ¼” holes for the grate (7" from top), burned out using a pallet, hit it with a wire brush a little bit, painted it with high heat primer and high heat paint, assembled with stainless steel screws, three pipe nipples held by two conduit locks, two 90* elbows with a ball valve on each (liked the “riser” look, but didn’t want to pay for the pipes) and finally seasoned with cooking spray, about 6 lbs. of charcoal, 10 lit briquettes, three pieces of hickory chunks and threw some country style ribs just because.





 
I am curious. For those with a flat lid, how did you attach handles? Did you screw them in through the lid with stainless steel screws or is there something else you used to keep the handles on the lid without having to screw into the lid and have screws hanging into the food area?
 
Looks good so far.. your gonna Love it! Im ready to do another one for my dad for Fathers day. He loves the easy "set and forget" of the UDS.
 
It needs some work (better pain, handles, etc.), however once I finally started building I couldn't wait to try it out. I have been following your thread, Farmer. I think you will get the same excitement I got when starting to build. I will definitely be making another one in the future. That's crazy to think since this one is about a day old, but it was actually fun looking for the parts, researching, building, etc.

Farmer, I would definitely recommend a burnout, if anything, just to save time to get the outside paint off. I was using a weed burner at first, but I was way too impatient to do it that way.
 
Mrlederman, I too have a UDS (a project in the works...) . I really don't like the thought of cooking with 'Charcoal' , but am open minded enough(just) to give it a try... keep on plugging at it and in the meantime, I'll keep an eye on yours...

Some nuts and bolts will do fine...stainess 1/4 x 1" should do.    IIRC mine have acorn nuts w/ bolts.

Oldschool.. I was with you on the charcoal thing until I made my UDS. I found out.. good fuel is better. The ready light cheap fuel... you get that 'charcoal' taste.. but with good fuel/lump.. i cant really taste the charcoal.. and I add a little extra wood chunks than probably most..

Nothing says you can't scoop your own coals into the basket...will try that myself sometime soon.  You all gave me the ideal to use my chiminea to do coals for my stick burner.

    W/ regards to charcoal, heck lump is really natural and w/ the wood chunks mixed in the leftover is great starter for the next cook.       You'll enjoy it that's for sure.    Keep in mind with your build that you really don't need a heat  diverter but if you do one you might want to have a rack above your basket that you can use a pizza pan with some holes drilled through it which will still let drippings get to the fire basket.

Do you do anything to keep the wood chunks from catching on fire?

The only time the wood chunks will catch on fire is when you open your lid sometimes (oxygen get's to it) but it goes back out when the lid is on.  UDS's are so tight you don't have to worry about fires or flare ups.

What FWI said farmer..once the lid is on.. or its air tight.. nothing flames up.. but I like alot of smoke flavor. .. one any cut of meat. .. IMHO.. thats the point of smoking ; )
 
I seasoned mine yesterday and just threw in a few hickory chunks (scattered). There were no big heat changes, flare ups or anything negative that I had grown accustomed to on my offset. The only time I saw some flames was when I took the lid off for a little bit.

Farmer, I don't know if you are doing a dome or flat lid, but if you do the flat lid - DO NOT burn it that long. I used a weed burner on mine and warped it some. I am not sure how people throw their lid on top of the burnout and have an undamaged lid at the end. My lid will close, but I have to press it down and set it in the proper place. However, even with a bad lid, the drum seems to close up tight. I shut it down yesterday after about 6 hours and still had charcoal and wood left this morning.

What has cost me the most is buying the tools I don't have. So, if anyone is near (and not psycho), I would be more than willing to share tools, supplies or lend a hand.

Since ive built mine ive taken camping a few times.. the coolest thing is I load my basket full.. and after what ever im smoking .. I close off everything except the top vent.. if planned right the next morning I remove the lid.. let some air flare up the fuel.. and BAM.. GOT a "grill" to cook up some eggs and chopped up whatever smoked in granny's cast iron skillet. .
