hi all , after multiple rib smokes ,and gaining confidence on the wsm, felt it was time to do a brisket, had wanted for a longtime and well did one overnight. Started it around Sunday midnight and was ready at around 1pm today. Smoked it at 250 with red oak ,wrapped it around 6am. At 1pm put it in a cooler w towels and let it rest for 2 hrs. It was a 16 lb packer prior to a little trimming ...super happy w result. Tender moist and flavorful, think this is just the beginning...can't wait to do some more, thanks all for looking.

Fine lookin brisky LMSQ!

How did you fit that packer in your WSM? Do you have the 22"? Looks like the skinny end of the flat was trimmed back quite a bit. Looks tasty anyway!
 
Thanks bro, yea i have the 22, actually didnt capture whole brisket on picture. Didn't trim flat much at all.and thin part of flat wasn't dry at all which was a pleasant surprise. Peace
 
Hi turned out really well pal, where abouts did you buy your brisket from ? Do you have any pics from before you smoked it cheers
 
Definitely point worthy for a great brisket and making the carousel! Kudos to the new Baron of Brisket!
 
I got to your thread after seeing the picture on the carousel. That is a great looking brisky. Real head turner (and stomach growler).

Thank u all again, i didnt take any pics before cooking, sorry forgot. I bought it at a local Italian supermarket, was a Sterling Silver, thats a brand, they say their meats grade out equivalent to choice plus to low prime, was 4.29 lb.. Think trimmed away about 3lbs ...
