Hello everyone. I just got at the last min told I was making the meat for my cousins wedding it's now 430 his wedding is Tom at 2 this isn't gonna be fun but. I got a beef brisket and a while chicken. Now I never mad a brisket before are they any tips or threads I can read to do this decent. It's stressing me out lol. Also if anyone has any ideas for good for a bbq wedding please let me know. Thinking more meats
 
I would keep the brisket for another day and get yourself a couple pork butts depending on how many folks will be at the wedding. Cook it at 275, once the IT hits about 205, take a probe and when it goes in like butter all over it's done. Fool proof. Brisket is a bit tricky for never having done one, especially for a wedding. Good luck

You just don't try smoking a brisket for a wedding without ever smoking one before.
To much to go wrong.
Your going to need a decent size smoker. How many people is this for?
