Hi from south Australia, don't know if i'm doing this right. I have bought a Hark Hot Gas Smoker. Anybody got any tips or hints on what to cook first.

Obviously chicken or something quick would be great to help season your smoker, but go wild as soon as you can.

You might want to check out Jeff's Free 5 day E-course it will teach you all the basics and a whole lot more!

If you want to do jerky you need to keep your temps under 170* anything above and you are cooking and not drying.

My first smoke was a pork butt - never regretted it.

Don't forget the Q-view when after you get that first smoke under your belt!

Learning your Smoker is first priority , as you season it....spread some lard or oil on it's inside(and out , to protect from blistering paint and rust) , then do something easy.

 Start with inexpensive cuts of meat , Chicken , Fatties ( Breakfast Sausage stuffed with goodies and wrapped in Bacon ), Meatloaf... you don't to make somathing your Dog wouldn't eat
