Order 4 racks of SRF kurobuta Spares. I had the day off so got up early and fired up the offset. I had a rack of BB’s in the freezer so decided to throw those in also. I stacked it deep when the Kroger’s has their buy 1 get 1. Conditions today was 20-25mph wind, starting temp was 34deg, yesterday it was 88deg haha.

I’ve really been digging the Meat Church Hog honey rubs. I used the hot honey on these.

I don’t let my ribs sit overnight rubbed I just fire up the smoker and rub them down and let them get wet until the smoker is ready. These took just at 3hrs they are small ribs (this rack is 1.2lb) but to be expected for farm raised hogs. I used smokinlicious maple logs, I like to use premium wood when doing these or wagyu.

The fat is just perfect, very sweet ribs. Had just the right bite off the bone. I’m looking forward to dropping the other 3 on the offset the next few weeks. Anyway enough babbling...
