Kielbasa Smoked 6/3/18

Chiming in because I read this and all and if you have a fleet farm near you, they actually have an entire area for jerky and sausage making and have this in stock. I might have to buy one now. I didn't realize until I googled more I could buy a sausage stuffer nozzle for the cannon!
 
One other thing if you order it get the bigger one,their are 2 sizes I think mine is 1 1/2 pound tube

Thanks for the info Richie, I looked it up on their web-site. I sounds pretty sturdy made of aluminum. It comes with the 1/2" round tube and a flat tube. I'm assuming that the 1/2" round isn't big enough for Kielbasa so I'd have to order the sausage nozzle as well. Total is about 60.00. Now to convince the wife. Maybe I could tell her it's a chalking gun and I'm planning on re-chalking the tiles in the bathroom. Hopefully it will be ordered by the end of the week. I'll be getting back to you for some tips on usage.

Correct, though one is labeled Jerky gun and the other is a Jerky Cannon. The jerky cannon is the only one that can take all the attachments.

Tom when I bought mine the barrels were the same diameter. Maybe the new ones are different thanks for passing that along

I think I confused myself . Thought you finished in a water bath , just realized you were talking about cool down ?
 
I've never bothered making these either Richie. Lots of Ukranians around here, si koubasa is readily available.
I have Cabella's Jerky Pistol so I'm not sure it would work.
I am however real interested in your recipe if you'd be so kind.
POINT FOR MOTIVATING ME. I like small batches like yours.

Richie, Great looking kielbasa,you can't beat making your own sausage! like

CM I have been making my own Fresh Kielbasa for ages only started smoking my own in 2014.Thanks for the Like I appreciate it

I think I confused myself . Thought you finished in a water bath , just realized you were talking about cool down ?

Yes that was to cool them I smoked them to 155* F

1 Cup non fat dry milk

1 level tsp. cure #1

2 Tbsp. salt

1/2 Tbsp. sugar

1 Lrg. clove garlic ( 1tsp granulated )

1/2 Tbsp. black pepper

1 tsp. marjoram

3 tsp mustard seed

8 oz. ice water

5 lbs ground pork.

What casings do you use? I guess I'm a tight wad I just can't seem to want to pay the price for casings they seem high. I mostly make patties.

Thanks for the recipe . I've been using a mix from Sausage maker . Gonna give this a try .
Couple months you might have to add some reapers to a batch !

Warren I have a local store that makes their own sausage,the casings are inexpensive some times you get a piece that is small but usable when doing small batches like I do.I just ordered from Waltons because I wanted some eatable collagen casing and trying the pre tubed.I bought some from Shoprite that were terrible.Check local butchers get a small pack.

I may have some to do that with LOL. I just edited the recipe cause I used some mustard seed in this batch oh by the way they tasted great no pics of the sandwich
