Jeff, 1/4 tsp of xanthan was for how much sauce?
I use 1/8 - 1/4 in around 50-60 oz. Is usually the sweet spot to prevent separation. I occasionally still get a little over longer periods of time. I always rest mine a day or two in jars prior to bottling to insure I don’t get separation short term.

What will you be using them in? So many choices…..
Not sure at this point. Need that caramel for this recipe. Probably Mango as I want to try make your hot sauce. Need to check out Mexican Market for peppers as they to $$$ in grocery store. Have you tried the Bakto brand?
