Keto Clam Chowder

I based this off Jeff's, Ham Chowder. I used the juice from 3 small cans of minced clams for broth. There was about 1 and 3/4 cups juice in those. Not much clam. This is better than the classic! Used some Old Bay in the onion and cayenne in the soup . Ate 2 bowls and could of had another. I halved recipe. Going to make the ham one with the other half of cauliflower. I like hot sauce on mine.

New England style clam chowder was one of my most successful keto dishes. A lot of work though. I used rutabaga and cauliflower. Had to boil the rutabaga in a heavy chicken bouillon liquid, then let that sit in the fridge in the liquid overnight to get that rutabaga stank off it, but it really DID provide that potato bite-through texture.

Gotta have hot sauce. Texas Pete for me for this kind of stuff.
 
I just made some Manhattan Clam Chowder on Sunday!
Never had that one. Might have to look inti it.
Wonder how this would work put as a clear chowder.

Been a while since I have tried rutabaga. Looks like HEB has it. Will pick up next time I am there.

That looks super delicious Brian. I make a real good ham/potato chowder that I also bend a bit into a clam/ or seafood chowder. It’s all about that cream base. I don’t use cream cheese though, just heavy whipping cream.

Thanks! Saving this one for sure. I can see making a full batch of the clam chowder and vac packing portions to reheat in boiling water later as well!

I not sure if this will freeze well or not. I never had any luck freezing anything with cream in it. Maybe Jeff jcam222 jcam222 knows.
