Keeping Apps Warm

Hello

How does everyone approaching keeping appetizers or smaller items warm? I'm referring to wings, poppers, etc.

I'm comfortable with holding meat in a cooler or just wrapped, however I'm curious for some guidance on best ways to take smaller items off of the smoker and keep warm for a period of time.

For example - thinking of doing some apps for a New Years party and curious on how to best keep warm during transit and until serving.

I put cooked food in the oven at 170℉. If it was fried, I put it on a rack on a baking sheet to keep it crispy and from sitting in oil. If it's moist, like meat, I cover or tent with foil. That works great for me. Keeps it warm but doesn't cook it anymore.
 
What Kris said. I normally cook pork shots and moinks a day ahead of the party and reheat in an oven(at it's lowest setting) on a baking sheet at the party.

So similar to a large cut of meat? How long have you found it to hold temps?
It depends on how many packs of goodies you stuff in the cooler.I put towels on the bottom and then stack all the tin foil packs and then more towels on top. Never had more than a 20 minute drive but they would stay hot longer depending on the amount of goodies.
 
Thanks everyone. I'm most interested in transporting to a different location and then serving there (where I may not be able to put in an oven).

Sounds like I should try the cooler method.
 
Illini40 you mentioned wings and poppers in your original post. I'm not sure how well these will travel in a cooler. I think both will experience changes in texture. The wings may(probably) loose the crispy skin and possibly get mushy and the poppers may get soggy/limp. Hopefully someone who has actually done this will chime in. I know time is short, but you may want to try it before bringing something to a party and being disappointed with the results.
