Have been tossing around the idea of getting an ANMPS since late summer. I've been giving a lot of thought to smoking cheese for the upcoming holiday season* parties. While I've done one cheese smoke on the WSM that was decent, it was a bear to keep the temps low and still make smoke.

Here's to a new chapter in smoking and my family & friends telling me I'm even more of redneck for making my own smoked cheese....

*I still can't believe I'm making Thanksgiving and Christmas holiday plans. Wasn't it just Memorial Day?
 
If you really want to go "redneck", go ahead and build yourself a true wood burning smokehouse and venture into sausage making and meat curing. Once you do, there is no turning back, no food taste as good as that that you had a hand in from raising or harvesting, butchering, curing, smoking, and consuming. As a side note, not to start a riot, but the Midwest, especially Western Wisconsin, where I reside is generally considered God's Country to those in the know. Sorry, just a few beers into a Saturday night and felt the need to defend my "turf".

Lol! I just so happen to have the lumber laying around for a smokehouse.

As far as God's Country goes... I don't mind sharing the title! You cheese heads make some pretty good food, and beer I suppose.... I guess there's enough blue sky for all of us.
