With my PB 820 suffering from a temperature disorder for the last 3 runs that made things quiet interesting, I just couldn't bring myself to fire up my Char-Griller-COS for the weekend. Knowing that I was going to have some wild temp swings I went ahead with my plan to do some beer-can chickens. Momma found a couple of nice little 5# fryers while doing the week-end shopping. So it was up to me and my dysfunctional Pit Boss to make it work. With no brining or injecting just rinsed and patted dry, I sprayed w/ butter and sprinkled a good coating of Tony's. Fired up the PB and slowly brought her up to 300*, + or - a whole bunch and threw the birds in without the aid of any terms. Two hours later I popped the hood, probed the birds and fired up my Maverick, needed a few more degrees. After about 20 mins. the alarm went off and I pulled these two out. Not too bad for doing it By Guess and By God. The skin was nice and crispy, but that was a waste because I quarter the birds for future re-heating. I'll be glad when PB sends me my new part and I can "set it and forget it".
Guess I should plan on using the Char-Griller after all.

they look good, almost done old school, what part went bad, I just got a pb1000 a while back just so I might know what to look for in the future if I have the same issue

Lately I've been having some major temp swings. I'm not talking the usual plus/minus 20*, I'm talking upwards of 100* and burning a hell of a lot of pellets. Spent a lot of time playing w/ "P" settings trying to level out the auger feed/timimg, allowing about an hour per adjustment without much success, so I called it in to the service center. After a lengthy conversation w/ a very pleasant young lady reading off of her company play book, it was decided that I needed a new temp probe, so the order was place. I've always been kind of OCD about cleaning everything prior to a cook BUT I've never removed the heat shield from the heat sensor for cleaning, but I have now! And I gently cleaned the extra cable and worked it back into the pellet housing. This little 2 & 1/2 hr. cook wasn't long enough for a good test but I've got a Butt in the freezer waiting for a good long run when the new part gets here.
 
Birds look great! I'd be happy with those any day. It looks like you got the timing down pretty good too. What did we do before all this automation? Hope the new probe makes the difference.
