Have not personally tried it but I don't see why it wouldn't work as long as you can keep the internal temperature low enough for dehydrating (around 150). The ability to do that is entirely dependent on the type of smoker and ambient temperature.
 
Even though most pellet smokers don't go below 180F, you can still make great jerky with them. I made the best jerky in my Memphis compared to times I've used other smokers or dehydrator. You just really have to pay attention to when it done so you don't dry it out too much.
 
i am new to this Pellet smoker, I also have an electric Master built smoker a propane smoker and a wood smoker, i Have done jerky on all three, so i figured i would try the pellet smoker to see how it did. so far the propane smoker is the winner
 
You can do jerky in just about anything as long as the temperature is good enough, and you have prepared the meat properly. I've done jerky on an old Big Chief, a Bradley, a dehydrator, and even in the house oven. Just keep an eye on it until you get the feel for your cooker and you should be good to go.
