So @jcam222 put this into my brain and I carried it out. Marinated my thighs in just the coco milk overnight. Poured the Walkerswoods seasoning into a bowl and coated each thigh. Onto a cooling rack then on the smoker. Started at 200 but did not go as quickly as I thought it would (heck, they are only chicken thighs) so I bumped it up to 225 for the last couple hours. Turned out fantastic. Served with jasmine rice and Jamaican slaw.

I LOVE jerk. Got a recipe for a jerk marinade / pork braise that is fantastic. I make it at least once a year. LMK if you would like a copy.
I would! I've been using Oakridge Jah Love. Unfortunately they are closed now.
 
Heck ya mon! Looks great! It be jerk (or Cornell) weather here in Ohio.

There's some good jerk threads in here. Nothing wrong with WW, it's good but legit jerk paste has a HUGE onion bite. WW as a base blended with onion gets you much closer but I add more stuff too.

Man I use Pops Fireman's chicken version of Cornell and the smell is intoxicating when on the grill!
 
We absolutely love Jerk pork and chicken here. So much so that I went out of my way to get some Jamaican Ministry of Agriculture Scotch Bonnet seeds and grow them myself. Habanero's simply aren't the same, but are often recommended as a substitute.

The actual seeds used to be fairly hard to come by, and I haven't found any commercial peppers that have been listed and sold as "bonnets" to even come close. It's been awhile since I grew any so I'm likely going to have to see if my seeds are still viable since we're moving through our supply of frozen ones.

I got lucky a few years ago and got some real Scotch Bonnet plants from a University Horticulture Club sale. I'll have to see if the seeds are still viable. Too late for this year, but get ready for 2027 crop.
