I decided to revisit the jalapeño cheddar thing. On my first try I used fresh peppers in my
Kielbasa recipe, it was very good but i’m not sure I like the raw taste of the jalapeño. Sorry
no pics. My second try I made a batch of frankfurters loosely based on a Rytek Kutas recipe.
This time around instead of fresh peppers I used some pickled jalapeños that I had made a few weeks ago, I diced them then put them in some cheesecloth and squeezed as much liquid out as I could. The result is killer, probably the best franks I have ever made. There are a few
minor things I want to change but I think this might be it:)
