It,s not what you got but how you use it. I just made some semi cold smoke gravlox in a Harbor Frieght Smoker tricked out with a Durostat #1102720. The thermostat cost twice what smoker did.Had some friends over and we finished off an entire side of the salmon. Many years ago there was an old man living just outside of Monte Rio, CA that smoked fish in a 1947 Chevy. My point is,

it's not the equipment, It's the cook. The SMF has made me a better one.

You are so right.  How you use it, and knowing all about it.  When I started hunting years ago, I was told to learn all I could about my rifle.  Having already been told this in the military I knew that already.  My father-in-law, a gunsmith, who helped me build my rifle, told me it wasn't necessary to have a different rifle for each species hunted if you knew yours.  He used to say, "be carefull of the man that only owns one rifle, he knowes it and can hit anything with it".  I think this goes for smoking too.  Although I own 2 smokers, one for hot smoking, and one for cold smoking.  Sorry about babbling a bit.  Steve
