I've got lots of projects going on this long weekend.  

The brisket that I've been soaking all week in Pops Cure / Brine is on the smoker slowly turning into pastrami.

I was out of bratwurst and the local markets had boneless butts on sale. So I grabbed 10 pounds and its been cut into cubes, seasoned and getting chilly in the garage fridge before grinding. 

But I wanted to take a time out and relax.  So I fired up the Green Weber. Popped a beer. ..And tossed on a couple burgers. 

Because It Just Wouldn't  Feel like Memorial Day If I Didn't.

God bless our troops. And god bless those that bravely served our fine country. 

So whats on your mind this weekend and whats cooking?

Brian, Thanks for adding the tribute to our service men and women. Too often we get so wrapped up in our fun and games and forget the folks who made all of our freedoms possible. Joe
 
Well put gentlemen.
As for what's cooking? Smoked some pork steaks yesterday and will be tossing a brisket on in the AM.

12 pounder. Simple cook, rubs then smoked with pecan and cherry at 250 then wrap around 160. Nothing to fancy, good piece of beef doesn't need much help.
