The is nothing like visiting smokingmeatforums to make you hungry not long after you ate dinner. That ham though.......

That is one ham I have never bought, as they are priced very stupid around here.

Many thanks David! This one was 2.49/lb from Sams. Its hard not to pick on or two up at that price!
Now I'd stand in line for THAT ham!
And I'm sure it tastes as good as it looks!

Much appreciated Keith! Funny thing is I had to stand in line to wait for the kidos and Mrs. C to plate up and then wait again because I took a pic! The saving thing was Mrs. C. heated the plates up so the food stayed warm LOL

Great looking meal! So the potatoes?? Look kinda like scalloped potatoes topped with corn flakes?

As far as the potatoes they are kinda like scalloped potatoes but not...... In these parts they are call Funeral Potatoes and can be found at almost every family or church type get together. They are way easy....

32 Oz of frozen shredded hash browns
2 cans of cream of chicken soup (10 3/4 oz cans)
2 cups of sour cream
1 cup grated cheddar cheese
1/2 cup melted butter
1/2 chopped onion.

You mix all this together cold and into a 9x12 and in the oven at 350 for about an hour.

you add the corn flake topping the last 10 mins once the potatoes are cooked (just test the center starting at 45 min in the cook.

Topping 4 cups corn flakes mixed with 4 Tbs butter then spread over the top. you want to cook them till they just start to brown and get really crispy....so be sure the potatoes are done before putting the topping on....you can also to a low broil to get that extra crisp and color if you want to.

Another variation is the 1/4' cube hash browns you just have to alter the cook time...

Oh and Mrs C had to make her own chicken soup for the first batch because we didn't have any cans in the house.... She made a flour onion butter roux then added the sour cream, cream, chicken bouillon, and chicken bone broth... Mrs C. amazes me all the time!

I will note that you can next day fry the potatoes for breakfast.....HOLY SMOKES they are good this way.....I may do it in the AM and will snap a pic if I do.

Good looking dinner.

The way the Brussels sprouts were prepared is how we usually do ours.
Thanks Jim and even our kidos eats the sprouts like this. Mrs C. loves them! I quite enjoy them and they are a fun cook as well!

Ah I added the recipe for the potatoes up above. You get a scalloped/au gratin like side without the work! You can also add copped ham, turkey or other stuff in the mix if you want too.

This is an on the fly recipe from Mrs C. She adjusts to taste as she goes…..

1 Cup orange juice
1 tbsp Dijon mustard
1 orange zested and juice
1/2 tsp ground cloves
1 Tbsp chicken base
1 Tbsp sweet soy sauce
Cup brown sugar
1/4 cup honey
Let simmer till the flavors are worked in….about 15-20 min….

If you have a seasoning packet that comes with the ham you can add some in to taste

Once simmered you thicken it with
2 Tbsp corn starch slurry (50/50 starch water mixed)

Once thickened whip in a tbsp of butter….

If too thick it can be thinned with chicken stock…to thick just a bit more starch slurry. Just cook the starch in….ie boil it for a min or two.

I use 1/2 of this as glaze and we save the other 1/2 to dress the slices on the plate
