How much of the cook time do you continue the smoking?
And does that mean feeding more and more wood arou d the electric element?

Welcome to the SMF!

I own an MES30 electric smoker and I don't put charcoal or wood directly on the element.  Most electric smokers have a chip basket or tray in which to put your wood chips.  It's a good idea to consult your user's manual as you mentioned in your first post.  If you put chips on the heating element they will flare up and won't last long (and could possibly damage your smoker).  Of course, I could be way off base and your smoker tells you to put the wood on the element...

I put about 1 cup of wood chips in my tray and they will last about 4 hours.  It depends on what you are smoking as to how long you want to keep the smoke going, it also depends on your personal preference for smokiness.  I keep chickens in the smoke the whole time (about 3 hours) but pork butts and brisket I stop the smoke about 6 hours into the cook. For long smokes like this you will need to reload your chip tray.

Your best bet to keep the smoke going is to purchase an A-MAZE-N Smoker.  These things are the bees knees for generating smoke and one of our forum members (Todd Johnson - Screen Name TJohnson) is the developer of this little jewel.  They use either saw dust or pellets and keep the TBS going for hours.

Good luck and good smoking.

Bill
