Long time smoker... Started out on a custom built Klose, moved to BGE, and now a GMG Daniel Boone, Lets just say the GMG was a stop gap product until I could justify what I wanted. Lets just say, my patience has worn thin with the performance, i.e. inaccurate temps, constant failure of pellets failing to load and lets just say total flaky wireless app. Yes I have called CS, just let than impressed with my results. Now lets move on from this rant. I need a smoker- Budget $5K

Absolute Must Haves-
  • Stable Temperature, within +/- 5 of what I desire
  • Lack of vast temp swings in chamber
  • Wireless Control/APP-Prefer outside of house, i.e. anywhere in world. No POS 2.4 GHZ, must support 5GHZ
  • Must have 1600 in of cooking area
  • Ease of Use, i.e. must not have hang out for 14 hours while watching the fire.


Nice to haves-
  • Stainless Steel
  • Able to fit into outdoor kitchen space
  • Ability to Sear at High Heat
  • Ability to cold smoke
  • Solid track record of product
  • Good Customer Service
  • Multiple Chambers able to cook/smoke at different temps
 
Not sure if you are locked in on pellet? I’m partial to cabinet smokers and swear by my 270 Smokers KC. Ton of cooking space, super well insulated quality build. Once temps dialed in its as set it and forget it as can be. You can run a Guru on it if you want to be able to monitor and control remotely. It’s so damn stable I haven’t bothered. 12 hours or more on one basket of lump. Doesn’t hit a lot of your nice to haves but it is amazing and turns out killer food. So this is sort of interesting as I do prefer burning charcoal over anything. However, I do not see electronic (PID) or a video on how it works.

So this is sort of interesting as I do prefer burning charcoal over anything. However, I do not see electronic (PID) or a video on how it works.
If you were to go with charcoal cabinet like the 270 you would buy the electronic control separately. Something like a CyberQ. 270 sells an adapter to hook that fan control to your smoker. Honestly you might be surprised just how temp stable it is without a controller. I sure was.
