Good afternoon everyone. I have been smoking for several years recreationally but now own a restaurant and want to bring that experience, and that of our chef, and do it in the restaurant. Apparently, the local health dept is not keen on exterior smokers being used with that food served in the restaurant. So now I'm looking for recommendations/pricing on smokers for inside a commercial kitchen. We have all the hoods etc in place for proper ventilation. We have a seating capacity of roughly 250-300people. Any help/advice that any of you way more knowledgable than I would be greatly appreciated.

Not sure but ive heard those from J&R are good. Cost about as much as a used truck though.

Southern Pride smokers, or Fast Eddy smokers. Fast Eddy has more options but are either electric or pellet.

Learned something new today… didn’t even know there WERE indoor smokers.

Some are actually indoor/outdoor smokers.
They fit thru the wall where the food access is indoors and wood is added outside. Of course the smoke stack is outside too.

Smokin It is an electric you can look into.
I had the analog Model 3 … it was very good at low and slow cooks. I moved to pellet for more versatility, but do miss that one a bit.

J&R, Southern Pride and Ole Hickory are the top tier indoor for large restaurants
