Im wanting to smoke in cold weather this year, I bought a welders fire blanket. It has 1000° resistance. The only thing that has concerned me is the blanket is fiber glass. I cut the handle out and vent/thermostat. With it being fiber glass should I be concerned??? Ive seen wool welders blankets should I go with the wool instead of fiberglass? Is one safer than the other? Or am I overreacting?

I don't think that I would worry about the fiberglass, but I would figure a way to "finish" the edges of your cuts. Either wrap with industrial strength tape, or find a seamstress to bind the edges. They may continue to fray.

I personally would be worried especially where it's fraying, but that's just me. Where do you live that you'll need the blanket? I smoke year round with my WSM and I live in what's considered a cold weather state. The weather stops me long before it will stop the WSM from performing.

Maybe try some foil tape on the cutouts to contain the fraying. Just a thought...
I used gorilla tape but the outside of my MES does not get hot.
