It is time for another batch of snack sticks. I'm using the Cabela's Teriyaki kit again using 21mm casings. I got 3.5 pounds of London Broil.
First grind at 3/8" plate:

Then ground to 1/8"

Then after adding the spice blend and cure into the stuffer. I'm very happy with how the turn table worked. It just turned on its own while the sticks were coming out.

And the left over from the elbow and tube was much less then my old stuffer.

They are now in the smoker. First hour at 120 with no smoke. Then 5 hours at 150 with smoke. Then bump to 165 to get to 155 IT.

Looks good Steve. You got the snack sticks down. Do you hang them or just lay on racks? If hanging do you tie ends?

I just lay them on the racks. I'm going to come up with a way to hang both them and summer sausage. Speaking of Summer sausage. I only have one left...
