I'm looking into getting a Pellet Grill/Smoker

I have had my trusty GOSM 20x34 from Walmart since 2007 and it works perfectly and love the bark. What I hate is the amount of time I need to regulate the temperature.

Is wanting a nice bark too much to ask for a Pellet Smoker?

I've been looking at the Zgrill , Traeger and the small model Rec Tek
 
Not too much to ask at all. Pellets will give you the bark. Personally I have a RecTec, but get what you think will best work for you. Pellets are a good way to get started. I've been tickled with the bark I get.
 
As a Traeger owner, I would pass on a Traeger. For what they charge, there are much better options, and the technology isn't rocket science.

The smoke flavor is heavily influenced by the quality /brand of pellets?

I'm looking at the Rec Tec RT-340-Wood-Pellet-Grill. It honestly the max I can spend on a Smoker/Grill. I was looking at other brands to get more area for cooking.

I can appreciate that. Look at all your options. Get one that suits your needs. Nothing worse than getting one that isn't big enough. Also nothing worse than getting one that doesn't work as advertised or like you hoped it would. We all have a budget. Study the reviews and do what's right for you and enjoy it.

Have to chime in for a Yoder. Expensive but I feel worth it. Plenty of bark. Use a rub with some coffe in it does not hurt.

I have the GMG Daniel Boone WiFi and very happy with it and impressed with quality so far after 500lbs of pellets and no issues to date.
