I'm going to Fort Worth next Monday. Along the way I am making a stop at the A.N. Bewley Factory in Dallas to check out their large scale commercial smokers.

They are supposed to have one completed pit ready to deliver and two more in construction so I should be able to get a good glimpse of how they are built and how they work.
