I have a huge Hobart industrial job that I got for cheap on Ebay. It is huge, ugly, and a hassle to move around (I store it in the garage
icon_eek.gif
), but man it is a slicing dream, I would recommend to anyone with the space and the back to move it.
 
Lisa, Aside from just using a knife.... I have taken brisket to my local butcher and had him slice it. He did not charge me and even packed the slices in 1lb vacuum pack bags. I gave him some of the brisket and to be honest I am not sure how much he took. I would be willing to bet he took enough for him and his wife to be able to taste it. For what he did I would have given more.
If you have a butcher/meat market you get your meat from ask them. If they know you and appreciate your business they maybe willing to help you out.

With practice it is possible to get good slices of brisket with a good slicer(knife). A sharp knife and steady hand is needed. I had niether here after along night/day of lotsa beer and no sleep but still got good results.
 
I'll use an oven alright.....just not when I'm smoking meat. I might be struck down by lightening or something.

As for the electric knife, it even comes in handy when I'm cleaning a hog! LOL!
 
Hey RIP, How do you like it?? I was looking at something like that last weekend. I just about have the wife talked into one, but I really don't have the bucks for a more expensive model.

One thing to take into consideration on these smaller slicers is the amount of draw length. This is determined by the distance between the back of the food tray and the front of the blade with the food tray pulled back as far back from the blade as possible. Some are fairly decent (mine is around 9 ior 10 nches) while others are only 5 or 6 inches.
 
Out of all the stuff we ordered this past week, the slicer is the only thing we haven't received yet. I anxious for it to get here. We will be needing it to slice our pastrami's this weekend and also for 5 pounds of cheese we have sitting in the freezer.
 
I have one that looks idential except is a Weston from kitchen collection. Thats what I used on the part. frozen to do my jerky and it worked fine. I only cut 5lbs.

I just purchased the slicer for $49 on sale at Cabela's. I got it 2 days ago and sliced my venison bacon with it. Works great. The only drawback is you have to hold the on switch on with your left hand while you slice. Once I got the hang of it all was good. My venison bacon was 7½" square and I cut it in half to make it easier to slice. I had plenty of room left on the draw back for the 7½". The good part is I used my Cabela's points to pay for it so it was basically free....

Just checked Cabela's and the sale of over. It's back to $99.99...
