Interesting this just came up. I did a Chuckie Saturday that went just like this. I pulled it at 190 though, because there were hungry vultures circling... I wish I had waited and got it little higher temp. I got a late start getting it in the smoker actually. But man, I'd sure eat that! Yes. There is always redemption in the next smoke.

I am dying to run this technique for myself. Just haven’t been able to locate tri tip in North Texas this far.

Shhhh, don't tell anyone, but take tri tip to 190F and tell folks it is a mini brisket. And if anyone asks, it was Mattyt7's idea (and a good one). Shhhh........:)

As is the case for me also. $3.49 for Prime brisket at Costco. I am just hoping to toy with the tri tip at 190 degrees. In fact I have never cooked or smoked a tri tip ever. Just not a thing in Texas at all. But this dog is gonna hunt!

Okay, the brisket sandwich I just pounded for lunch was superb. Thinly sliced and reheated in the microwave just enough to melt the cheese on top did the trick. It was like a completely different piece of meat.
